Fiore’s Maine Lobster Mac and Cheese

What was your favorite food as a child?

If you didn’t say macaroni and cheese, then did you really have a childhood?

We think it’s safe to say that mac and cheese is one of those universal dishes that you bite into and instantly feel like a six-year-old (and what grown up isn’t dying to be a kid again?).

Well if you’re tired of walking the tight rope between the trials of adulthood and the joys of childhood, we have a solution for you.

Lobster.

That’s right, Maine Lobster Mac and Cheese! It’s the perfect blend of gourmet and comfort food.

So with no further ado we present Fiore’s Executive Sous Chef Israel Ortiz and his decadent Main Lobster Mac & Cheese recipe.

INGREDIENTS

MACARONI MIX

7 oz. White cheddar (grated)
3 oz. Gruyere (grated)
5 oz. American cheese (cubed)
16 oz. Heavy cream
1 lb. Cooked macaroni pasta
12 oz. Cooked and chopped Maine lobster meat (salt and pepper as needed)

MACARONI TOPPING

3 oz. White cheddar (grated)
3 oz. Gruyere (grated)
3 oz. Percorino Romano (grated)

DIRECTIONS

Step 1

Preheat your oven to 350 degrees.

Step 2

In a medium-sized saucepan, bring cream to a boil and reduce to medium-high.

Step 3

Cook cream for six to eight minutes.

Step 4

Lower heat to the lowest setting and slowly whisk in all the cheeses until completely melted. Keep your cheese at room temperature before use and whisk cheese in gradually so that your sauce is smooth and completely melted when done.

Step 5

Mix in the macaroni and cheese and fold in your chopped lobster meat (feel free to add any protein of your choice).

Add salt and pepper to taste and then transfer your mix to an oven-safe baking dish.

Step 7

Top your mac and cheese with the remaining cheeses and place in your preheated oven for approximately 20 - 25 minutes. Serve and enjoy as a side dish or as a main entrée, bon appetit!
